Caribbean Coconut Cake
Toto (pronounced toeto) is a Jamaican traditional desert that is served at most family gatherings. It is a favorite of Jamaican at home and abroad. Toto is one of the easiest Jamaican dishes to cook. Coconut flavor is the key element of this traditional Jamaican dish.

Ingredients

  • 8 Ounces Unsalted Butter
  • 3/4 Cup Granulated Sugar
  • 3 Units Eggs
  • 1 Teaspoon Vanilla Essence
  • 3 Cups All-Purpose Flour
  • 3 Teaspoons Baking Powder
  • 3 Teaspoons Cinnamon Powder
  • 1/4 Teaspoon Nutmeg Powder
  • 2 Cups Coconut grated
  • 8 ounces CARNATION® Full Cream Evaporated Milk
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt

Instructions

  1. Pre-heat oven to 350 degrees. Using an electronic mixer; cream butter and sugar, until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla then beat for 2 minutes.

  2. Sift together flour, baking powder, cinnamon, salt and nutmeg. Add flour mixture to creamed butter mixture. Dissolve baking soda in Nestle Carnation Evaporated Milk. Using a wooden spoon fold into batter.

  3. Pour evenly in a greased baking tin. Bake for 30 minutes. Once baked insert a tooth pick in centre. If it comes out clean the Toto is ready. Remove from oven and allow to cool.
