Khoresht loobia sabzi (Khoresht: stew, Loobia sabz: green beans) is low in saturated fat and cholesterol and high in vitamin C. Green Beans in khoresht loobia sabz are very low in calories and high in dietary fiber and vitamins. 3.7 ounces (105 grams) of khoresht loobia sabz has 102 calories.This Persian Green Bean Khoresht is simple to make and if you don’t want to use fresh green beans, frozen ones are just fine as a substitute.

# Small dice onion and mince garlic. Saute until just past translucent in some oil. Add turmeric and mix well.

# Cut meat into 1 inch cubes. Season with salt and pepper and add to onion. Brown meat on all sides. Add 2 cups of water, cover and simmer on medium low for 1 hour.

# Add can of tomatoes, tomato paste, and 1 cup of water. Let come to a simmer and adjust seasoning as needed.

# In the mean time remove string from green beans, remove ends and cut into 1 inch pieces.

# Saute green beans in some oil for about 3 minutes making sure to season with salt.

# Add green beans to stew along with lemon juice. Cover and simmer on medium low for 1 hour.
